What Are The Ingredients For Kick-Butt Turkey Chili Recipe?

The ingredients for Kick-Butt Turkey Chili are:

1 tbsp olive oil
1 large white onion, diced
2 tsp salt, divided
4 cloves of garlic, minced
½ each of a large red, yellow, and orange bell pepper, chopped or, 1-2 large red bell peppers, chopped
1-2 jalapeno chiles, finely chopped or 1 serrano chile, finely chopped
1-2 chipotle chiles in adobo sauce, chopped
1 small bunch cilantro, chopped, with 1-2 tablespoons reserved
2 tbsp chili powder (I use hot Mexican-style)
1 tbsp unsweetened cocoa
1 tsp each dried rosemary, thyme, oregano and cumin
1 bay leaf
1 lb ground turkey (I prefer 93% lean)
3 14.5 oz cans of diced tomatoes with green chiles OR jalapenos OR fire-roasted diced tomatoes
1 14.5 oz can of black beans, drained and well-rinsed
1 cup frozen corn


How Do I Make Kick-Butt Turkey Chili?

Here is how you make Kick-Butt Turkey Chili:

Heat olive oil in dutch oven or large saucepan. Add onion and sprinkle with 1 tsp of salt. Cook on medium heat until onions are starting to color, about 5 minutes, stirring often. Add garlic, bell pepper, jalapeno, chipotle chiles and cilantro and cook until peppers are soft, about 7 minutes. Add chili powder, cocoa powder, dried spices and bay leaf and cook for an additional 2 minutes, stirring frequently. Add ground turkey and remaining salt and raise heat to medium high. Cook turkey, breaking up large pieces with a spoon, until browned, about 5-7 minutes. Stir in tomatoes, beans and corn and bring to a boil. Lower heat and cook at a simmer for 15-20 minutes to allow flavors to blend. Sprinkle remainder of cilantro on top and garnish as desired or serve with guacamole. Enjoy!
