Saute the fresh vegetables in olive or canola oil-- onion, garlic, peppers. Season with pepper to your taste. Add the meat and cook with tomatoes. Rinse corn and beans before adding. I used low salt corn, but would have used frozen if I had it on hand. The longer it simmers, the better it gets. Add red pepper flakes to taste at the end.

Garnish with low-fat sour cream or yogurt, cilantro, chopped onion, avocado, low-fat cheese and maybe a jalapeno--whatever you like.
