I pkg Shady Brook Farms Ground Turkey (Italian Style)
1 large Eggplant, Peeled, Cubed in 1/2in
1 tbs Kosher salt
1 clove Garlic, Minced
1/2c Red Onion, diced

2c Part Skim Ricotta
2c 6 cheese Blend (Italian)
1/2c Red Onion, diced

3 cans Hunts Fire Roasted Tomatoes w/ Garlic
1/4 Tsp Crushed Red Pepper
1 tbs Kosher Salt

14 oz. Barilla Lasagna Noodles (little less than a box)

1/2 c Mozzarella part-skim


How Do I Make Easy Eggplant and Turkey Lasagne?

Here is how you make Easy Eggplant and Turkey Lasagne:

Saute Turkey in 1 tbs Olive Oil and scramble until almost cooked. Remove from pan and set aside without draining fat. Add remaining oil to pan and saute eggplant with garlic and onion when half way cooked add turkey back in. Cook through.In bowl combine cheeses and 1/2c Onion. Reserve.In blender pulse tomatoes crushed pepper and salt til smooth. (About 8 pulses)In a 13x9x2 glass pan Put 1c tomato blend in bottom. Layer in 5 noodles. Then top with 1/2c more of tomato. Then add all the meat mixture. Top with another 1c Tomato. 5 noodles again. Then spread all the cheese on the noodles. Spread 1c more sauce. Then one more layer of noodles covered with remaining sauce. cover with Parchment then Foil. Cook covered for 45 minutes at 375F.Uncover and lower temp to 350F for 20 minutes. Top with Mozzarella and cook until cheese is bubbly.Serves 8.*I know that the noodles are not parboiled...this is my preference. I find that if they are boiled beforehand the lasagna is runny. The noodles will absorb the moisture and steam created by the sauce and eggplant.
