1 can of petite cut tomatoes
1 cup of shredded Mexican style cheese
1 packet of taco seasoning mix
1-1/2 cups of enchilada sauce
3 tbsp light sour cream
1 cup of water


How Do I Make Whole Grain Turkey Enchiladas?

Here is how you make Whole Grain Turkey Enchiladas:

Brown ground turkey in large skillet, add taco seasoning and cook as directed.Add rinsed black beans, tomatoes, brown rice and 1 cup of the enchilada sauce. Combine and heat. If mixture becomes too think, add water as needed to thin it out a bit.Next add the sour cream and stir until combined.Add cheese and heat until cheese is melted and combined.Put 3 tbsp of the meat mixture into the center of a whole wheat tortilla, wrap and place in a 9x12 baking dish. Repeat with remaining mixture and tortillas.
