Drain and rinse kidney beans.Brown Meat with onions in olive oil. Add rest of the ingredients (except parsley), simmer for about 1 to 1 1/2 hours. Add parsley the last 5 to 10 minutes of cooking.(Serve with a sprinkle of shredded colby Jack Cheese or Chedder Cheese if desired. Not included in the Nutritional info.)
