Ricotta cheese, partly skimmed, 2 cups, divided
Parmesan cheese, shredded, 1cup, divided

Add oil to pan, and saut? onions until soft. Add garlic, then turkey, breaking it up as it cooks. Add spices and stir in to distribute. Add dices tomatoes and tomatoe paste, stir to combine, reduce heat to a simmer and cook for about 10 minutes. Use this time to assemble the rest of your ingredients and spray the lasagna pan with cooking spray.Assemble starting with half the meat sauce in the bottom of the pan, top with one cup of the ricotta cheese dropped by spoonfuls. Sprinkle a half cup of the Parmesan cheese on top. Top with defrosted spinach. Repeat the layers again with the meat sauce, the ricotta cheese and the Parmesan cheese. Bake for 30-40 minutes at 350 degrees F. Let rest for about 10 minutes before serving.
