IN a pot, bring stock and rice to a boil. Cover and reduce to low and simmer until liquid is absorbed about 40 minutes. Saute peppers, oinos and garlic in oil until softened. Add sausage and satue until brown. Add beans and one cup of bean liquid, diced tomatoes with juice, thyme, and bay leaf. Simmer uncovered for 20 minutes, stirring occasionally.
