Add onions, garlic, bell pepper. Cook through. Add shredded carrrots, paprika and black pepper cook 2 mintues add pureed pumpkin and tomato sauce and red wine vinegar. Simmer on very low heat covered for 10 minutes. Serve over rice, lentils or on a bun.
