1 cup winter squash, diced
1 1/2 cups low-sodium vegetable stock
1 cup water
1/2 tsp freshly ground black pepper
1/2 tsp freshly ground sea salt

Makes 10 servings.Slice potatoes and place in bottom of crock pot. Peel a small winter squash and cook for 4-5 minutes in microwave; halve, scrape out seeds with a grapefruit spoon, and dice. Layer on top of potatoes. Cut each sausage link into six pieces, and layer on top of potatoes and squash.Chop celery and onion, and layer on top of sausage.Chop cabbage and layer on top of other vegetables and meat.Pour vegetable stock and water over layered contents of crock pot.
