Yummy soup/stew that my family loves. I serve a green salad and french bread on the side. I've never calculated how much soup this makes for the serving size. I'm guessing a serving size is around 1 to 2 cups. To cut more calories and fat use ground turkey breast. To cut out more sodium, use reduced sodium chicken broth. If you can't find cannellini beans you can substitute w/ red kidney beans.

Brown turkey and garlic cloves in large pot over medium heat. Add chicken broth, diced tomatoes, beans, and carrots. Bring to a boil and simmer covered until carrots are tender, but not mushy. Add zucchini and spinach and cook covered until zucchini is tender and spinach is wilted.
