Here is how you make Turkey/Veggie Pita Joes:

Chop all veggies fairly finely, except tomatoes. spray bottom of a large saute pan with coking spray, add chopped veggies to pan, cover, and turn on medium heat. Shake every now and then but do not remove lid. This will steam veggies to a nice consistency.Chop tomatoes in large chunks. Add Tomatoes to pan, cover, allow tomatoes to mingle with other veggies.Remove all veggies to a bowl. add Turkey to pan. Brown.add the veggies to the cooked turkey, add seasoning, water, and tomato paste.
