Prepare Quinoa according to package directions.Slice tomatoes, asparagus and broccoli. Add tomatoes, and olive oil to saute pan with lid. Cook on low until juice starts to leave tomatoes (usually about 5 minutes). Add asparagus and broccoli to pan and immediately replace lid. Turn heat to medium low and let mixture cook for 15-20 minutes without removing lid. If liquid starts to cook off add .25 cup water.
