Mozzarella Cheese, part skim milk, 8 oz grated
Carrots, raw, 1 cup, grated or thin sliced
Spinach, fresh, 1 cup chopped
Broccoli, fresh, 1 cup, grated

Here is how you make Amy's Vegetable Lasagna:

Preheat oven to 375 degrees F. In Large skillet, heat over a medium high heat. Add the pasta sauce and all the vegetables and simmer for 7 to 8 minutes uncovered. Remove skillet from the heat and stir in the romano cheese. To assemble, spread 3/4 cup of the pasta sauce mixture over the bottom of the baking dish. Place the noodles cross wise on the sauce. Spread with one third of the ricotta cheese. Repeat layers. Top with the remaining noodles, cover with sace and mozarella cheese. Cover dish with foil. Bake 50 to 60 minutes until hot and bubbly.
