15 Whole Grain Whole Wheat Lasagna noodles
1c Mushroom chopped
1c Mozzarella
2c Pasta sauce
2tbsp olive oil
1 Egg
1 10-12oz package frozen spinach
10oz Ricotta cheese


How Do I Make Very Veggie Lasagna?

Here is how you make Very Veggie Lasagna:

Preheat oven to 375 degreesCook noodles according to package (al dente) then set aside on either wax paper or foil Brown turkey then set aside (I season my meat before cooking)Sautee squash, onions, eggplant, and mushrooms, when done place meat back in skillet. Add pasta sauce and simmer for 2 min. Meanwhile, mix spinach, ricotta, egg, salt, and pepper in a bowl.Spread 1 cup of pasta sauce in dish. Place a layer of noodles on top touching, not overlapping. Spread half of the ricotta mixture on top of noodles. Add a layer of noodles. Top with half of the meat mixture. Repeat with another layer of noodles, then remaining cheese mixture, more noodles, then remainder of meat mixture and finally 1 more layer of noodles, top the remaining layer with sauce then add cheese.
