You can stir in some extra spices - I recommend cumin, turmeric, cardamom, and coriander listed here, but you are limited only by your personal taste and pantry! You may also substitute for low sodium versions of the soy sauce.Cut up the tempeh into chunks and put it in the marinade. Be sure to drizzle some marinade over the top. Cover and put in the fridge for 24 hours. (can be done for less or more time, it will affect how strong the taste is). Note - tempeh can be substituted for extra firm tofu.The next day, pull the tempeh out of the fridge.Get a wok or fry pan and put the oil in it and start warming it up on medium to medium high heat. Put the tempeh in the pan once the pan has warmed up. Save the marinade and reduce it in a second pan on low heat.At the same time, cook the rice. (you may substitute any grain or grain product for rice - for example, brown rice, couscous, soba noodles, quinoa, etc)Add your cauliflower and broccoli to the wok. I used frozen, but fresh can work as well. Once they are mostly cooked, add the spinach.You may need to add a bit of water every now and then to ensure a good steam. Do not add too much water! Just a tiny splash will do. You do not want the veggies sitting in water.Once they are warmed and cooking, add in the spinach and continue cooking until the spinach is nearly done.You can also add or subtract any veggies to this. Cabbage, other leafy greens, snap peas, carrots, peppers, would all make great additions or substitutions. When the veggies and tempeh are almost done, pour the reduced marinade over the veggies and tempeh.
