Here is how you make Island Wings:

The night before you intend to cook the wings, you'll need to marinate them to get that delicious island flavor. Using a sharp knife, cleaver, or poultry shears, separate the wings at the joint, making a "wing" and a "drumette." Wash and pat all pieces dry with paper towels.Mix together lime juice, rum, soy sauce, and peppers. Place chicken pieces in a nonmetal container and pour the lime juice mixture over them. Add enough water so that all chicken is covered. Cover container and refrigerate overnight.Preheat grill on medium-high heat or prepare a bed of hot coals in the grill. Remove wings from refrigerator and drain well. Grill wings over hot coals until done, about 7-10 minutes, turning often to prevent burning.To Broil Wings: Broil the wings on high or in a preheated 500 degree F. oven about 6 inches from the heat.
