1. Heat the oil in a large pan, fry the onions for 5 minutes until golden and softened, then tip onto a plate. 2. Add the chicken breasts to the pan, browning for a few minutes on each side, then stir in the balti paste, uncooked quinoa and onions.3. Sizzle for a few minutes, then pour in the tomatoes and stock and give everything a good mix. Bubble for 25 minutes until the quinoa is tender and saucy.4.
