I prepared my brown rice the day before as it usually takes a long time to cook. Take half of your veggies ingredients and pureed them. In a pan medium heat put some cooking spray, add the veggie puree, the rest of the veggies, the small pieces of chicken, the cauliflower and last the rice. Since most of the ingredients are precooked it doesn't have to take long (I wait until the carrots are a tiny bit soft).
