Dice chicken and cook with chili powder and minced garlic and onion. When chicken is mostly cooked add black beans and chopped red bell pepper. Cook for a couple of minutes to allow black beans to dry and thicken. Drain the tomato juice into the pan and then chop the tomatoes and add them. Stir and let cook a couple of minutes to let mixture thicken. Mix in green chiles and corn and cook for five more minutes uncovered, stirring occasionally.Recipe makes 11, .5 cup servingsA half cup of the mixture fills a low carb w/w wrap nicely. I usually make two wraps per adult and add a quarter cup of shredded cheese, a half cup of shredded romaine lettuce, and some sprinkles of Tapatio to each set of burritos. A nicely, filling meal!
