Makes 8 ServingsPreheat oven to 425.Cube 1 pound of chicken. Place in frying pan with 1 can of enchilada sauce, 1 chopped green pepper and 1 chopped onion. Simmer until chicken is fully cooked.In casserole dish, put spoon of mixture into wheat tortilla. Sprinkle a little cheese in, and roll up. Repeat until all tortillas and filling mixture are used.Cover the tortillas in second can of enchilada sauce. Cover with remaining cheese.Bake at 425 for 20-30 minutes.
