Heat oven to 350. Prepare a 9 x 12 casserole dish with a bit of non-stick spray. Slice the chicken rather thinly. (easier if it's still a tiny bit frozen) Spray skillet with non-stick spray. Cook just until barely done with salt & pepper.At the same time, saute veggies, approximately 1/4 c. per enchilada.Open your sauce and have cheese ready to go. Mix 1/3 of 1 can of sauce with your cooked chicken. Get out 6 flour tortilla shells. Line the center with the chicken and top with the veggies. Roll top over each way and place in casserole dish, 6 across will fit perfectly. Pour the remaining sauce over and top with the cheese. Cover with foil. Bake for 20 minutes until cheese is melted.
