Birria (beer-ee-a and don't forget to roll that R!) is a traditional Mexican meat that is used for large celebrations. The first time I tracked down a recipe it started with "take 100 pounds of beef..."! I have reduced the amounts, but the ingredients are authentic. Serve with flour tortillas & Juchipila Mexican Rice (see recipe).

____ cup Cider Vinegar 1/2 cup
____ Cloves, ground, 1 tbsp (remove)
_____ Bay Leaf, 1 tbsp, crumbled (remove)
_____ Garlic, 1 clove (remove)
_____ Onions, raw, 1 cup, chopped (remove)
_____ Salt, 1 tsp (remove)


How Do I Make Mexican Birria?

Here is how you make Mexican Birria:

Prepare the beef by cutting it into large chunks about 3" x 3". Set aside in a large bowl.*You may want to wear gloves to handle the chilis. Prepare dried chilis by removing the stem, cutting open lengthwise and removing all the seeds.*Place chilis and remaining ingredients in a blender and blend on high for 2 minutes. Scrape the sides of the blender. Blend until there are no visible pieces left. This should be the consistancy of ketchup. Pour chili mixture over the chunks of meat and cover evenly.*If I'm cooking this small amount just for dinner, I will put the meat in a single layer in a large metal cake pan and tightly cover the pan with foil. Bake at 375* for _______ hours or until the meat is fall-apart tender. (A crockpot also works okay. The flavor is good, but is missing something from not being able to have the meat 'brown' as it bakes)*To cook traditionally, take 2 or 3 pieces of meat and wrap them tightly in foil packets. Place packets in a roasting pan and bake at 375* for ______ hours. This is the best way if you are preparing a large amount. When I prepare this for a party with my Mexican family and friends, I cook 8 - 12 oz. per person. This is a rare treat and will be devoured!*To eat, tear off a piece of flour tortilla and use it to pinch off some meat and sop up some juice.
