drain the beans, save 2 tablespoons of the liquid. mash beans in a bowl and add in finely diced shallot, one finely grated carrot, cornmeal, and sage (chopped or ground). season to taste with salt and pepper. Add in 1 tbsp of the reserved liquid. if the mixture is dry, add the second tbsp. Heat a large pan over medium high heat. Add 2 tbsp of oil. Form the mixture into 12 patties and saute until golden brown on both sides and crisp. This is about 2-3 mins per side. May need to be sauteed in batches depending on the size skillet you are using.
