soak dried beans over night or in hot water for 3 hours. set aside.Add water in stock pot bring to boil. Add turkey and reduce heat and simmer for 1 - 1 1/2 hours.Drain beans and add to stock pot w/turkey. Return to boil. Reduce heat and simmer for 1 - 1 1/2 hours.When beans are firm yet tender, add kale. Cook another 30 - 45 minutes until kale is done.Be sure to add water as cooking to maintain desired consistency (should not a soupy). Serve with an un-slotted spoon.
