1/2 stick (2 oz) Butter, salted

1 clove Garlic, minced (optional)

1/8 cup Non-fat Milk

Here is how you make Simple Low Carb Mashed Cauliflower:

Cut florets from cauliflower. Rinse them and put in microwave safe bowl. Add 1/8 cup water (to create steam) and cover. Microwave on High for 4-5 minutes (florets should be soft when pressed with fork). Drain excess water. Mash with fork or potato masher until crumbly. In blender or food processor, add hot cauliflower, 1/2 pkg neufchatel, 1/2 stick butter, minced garlic, and milk. Add your favorite spices now too (I use salt, pepper and a tsp of bacon bits - not included in nutritional info for this recipe). Pulse or blend to desired consistency. You may need to use spatula to push mixture down from sides of blender once or twice. If too thick, add a little more milk.Empty into serving dish and Enjoy!Serving Size:?makes 8 servings.
