I based this recipe off of a delicious raita I had at the Clay Pit restaurant in Austin. You can use any kind of plain non-fat yogurt (I prefer Greek), and adjust the seasonings to your own taste. Next, add the slices of cucumber and carrot.With the heel of your knife or a mortar and pestle, crush the coriander seed into rough chunks. Add to the yogurt sauce, along with the cumin and red pepper. Season with salt and pepper to taste.Serve with naan or fresh pita bread.
