Bring water and 1 1/4 c broth to boil in small sauce pan. Stir in bulgur, reduce heat and cover, simmer 12 - 15 minutes until liquid is absorbed.Remove pan from heat.Meanwhile, heat olive oil in small skillet. Add onions, stir 1 minute, add walnuts, stir 1 minute, add garlic, stir 1 minute, add curry powder and stir 1 minute. Add apricots and remaining 1/2 c broth. Stir 2 minutes.
