I medium red pepper, chopped
4 oz. Prosciutto, chopped up (optional, but included in the calculation)
Kale, 2 cups chopped
Swiss chard, 2 cups chopped (stems removed)
1 tsp. turmeric
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground cinnamon
Freshly ground black pepper
Salt to taste (I just added a sprinkle)
1 tbsp. Extra Light Virgin Olive Oil

Here is how you make Potato, Kale, and Chard stir-fry:

Toss the potatoes in a little of the EVOO and spices. Put into a hot large frying pan with the remaining EVOO. Cover and stir a few times for 10 minutes. Then add the chopped onions, carrots, and pepper. Cover and stir some more for about 5 minutes. Add the zucchini, prosciutto, and then the chard and kale. Pour a little bit of water in to wilt the greens and cover for about 5 more minutes.
