Preheat oven to 375 F. Coat baking sheet with cooking spray. 2. Heat oil in small skillet over medium-low heat. Add onion, and cook 10 minutes, or until light brown, stirring occasionally. Add garlic and chopped sage and cilantro, and cook 2 minutes more. Transfer to bowl. 3. Combine pumpkin puree, breadcrumbs and egg in bowl with onion mixture. 4. Form into 1-1/2-inch balls, and transfer to prepared baking sheet. Bake 10 to 15 minutes, or until bottoms are golden brown. 5. Serve pumpkin balls with green pepper sauce or hot sauce (optional - not in calculation).
