2.5 cups unsalted chicken stock

Here is how you make Cajun Rice and Collards:

Cook bacon in non-stick pan w/ 1 tsp. olive oil. When just about crisp, about 2 min, add onion, peppers and cook until slightly browned, aprox 5 min. Add garlic and seasonings and cook 1-2 more minutes. Add 2 cups water or chicken stock and stir to loosen bits from pan. Add vinegar.In lg pot add 1 cup water or stock and rice bring to a boil and cut down to low. After 20 min add cooked veg's and collards.
