Had cooked some extra brown rice and needed to use it so tossed together this satisfying and spicy spanish rice. Perfect to use up leftover rice and tomato sauce. To make it a main dish, add some black beans, shredded chicken, extra tomato sauce & spices, put it in a casserole dish, sprinkle with a a couple of tbls cheese and bake.

1/2 small onion, 1/2 c. Red Pepper (from a jar or fresh), 1 tsp minced garlic, 1.5 tbls chicken stock, 1/2 tbls fresh jalapeno, 1 cup & 1 tbls tomato sauce, 2.5 cups cooked brown rice, cayenne pepper, adobo seasoning, cumin, onion powder (all to taste - I added extra cayenne and cumin).

Here is how you make Spicy Spanish Rice:

Saute onion, red pepper, jalapeno and garlic in the chicken broth (cuts out fat from using oil). Add in the cooked brown rice and tomato sauce and season with spices. Simmer over low heat until the flavors blend and the veggies have time to completely soften.
