Recipe adapted from WeirdEyes' Dirty Rice. I just modified this so that the Gimme Lean Breakfast Sausage is used, along with Vegan worchestershire sauce and vegan beef flavored broth. I also add some of the Tony Cachere's 'LITE' creole seasoning to taste. SOOOOOO good! I think that using sausage flavored substitute sausage gives it a more authentic flavor.(I always use reduced sodium products, when available to help lower the sodium of the dish. You will notice there is no added salt but you definitely do not miss it!)

1 pkg Gimme Lean Breakfast Sausage Substitute (~14 oz)
2 cloves garlic (minced)
1 medium onion (chopped)
1 bell pepper (chopped)
1 T dry parsley
1 T Worcestershire sauce (Vegan)
1/4 t ground red pepper
1/4 t ground black pepper
1 cup brown rice (regular, not instant)
2 t beef flavored boullion
2 c. Water
*Optional Tony Cachere's LITE creole seasoning (it's light because it has less sodium)


How Do I Make VEGAN Dirty Rice?

Here is how you make VEGAN Dirty Rice:

Chop vegetables and garlic. Place in a heated pan sprayed with cooking spray. Stir vegetables, add ground sausage. Saute until cooked through. Add spices, Worcestershire, rice, broth and water. Bring to a boil and reduce heat (to medium/medium low), cover and let simmer for 30-45 minutes or until rice is done. Serving Size:?makes 4, 8.75 ounce servings (just over one cup)
