Wash lettuces, and let drain completely. Refrigerate until cold. Split head of iceberg in half, pulling the heart out and breaking it into small pieces. Do NOT use a knife. Separate rest of iceberg. Tear each romaine leaf into 3 pieces. Place lettuce in large bowl. Add artichokes hearts, onion, and pimientos.Combine olive oil, vinegar, salt, pepper, cheese, pimiento juice, and artichoke juice.
