2 Fresh Lemons
1/4-1/2 Cup Red Onion
1 Cup Arugula
1/2 Cup Fresh Parsley
1/4 Cup Olive Oil
Salt, Pepper, Salt-free Seasoning


How Do I Make Lemon Quinoa Salad?

Here is how you make Lemon Quinoa Salad:

1. Rinse and drain quinoa while veggie stock comes to boil.2. Add quinoa to rapidly boiling stock. Cover and turn down to simmer for 15 minutes.3. Grate carrots, chop pepper, & mince red onion. Put all veggies in salad bowl. Zest both lemons over bowl and then juice them (I use a strainer to avoid seeds and pith).4. Chop arugula & parsley and add to bowl. Add olive oil, salt, pepper, and salt-free seasoning, check and adjust seasoning to taste.5. Turn off heat and check quinoa at 15 minutes, replace lid and let sit until all liquid is absorbed or desired doneness is achieved.6. Add cooked quinoa to bowl and stir well to incorporate all flavors.
