1/2 Can Black Beans (rinsed well)
1 jar artichoke hearts
1/2 Cup Roasted Red Peppers
4 Green Onions
2 cloves minced garlic
1/2 Cup Black Olives
1/2 Cup Green Olives
3 Tbls extra virgin olive oil
1 Tbls balsamic vinegar
3 Tbls fresh squeezed lime juice

Here is how you make Jan's Quinoa Salad:

Soak Quinoa in water for a few minutes and then rinse well. Place in 2 quart saucepan with chicken stock. Bring to a boil and then cover and simmer on low for 20 min. When done, drain well in a strainer and place in a bowl to cool.Meanwhile, chop vegetables and place in large bowl. Mix in half of seaonings.
