1 yellow onion chopped
6 big handfuls of spinach

1/2 cup creme fraiche
1 cup double cream
1 cup cooking liquid (wine, water, broth)

Here is how you make Creme of Spinach Soup:

Melt butter in deep sauce pan. Saute onions and garlic until onions are translucent. Add half the spinach and a little cooking liquid. Cover and allow spinach to wilt down. Repeat with remaining spinach. Once the spinach is wilted, add remaining cooking liquid and allow to simmer 30-45 minutes, stirring occasionally. Use immersion blender to puree to desired consistency. Salt and pepper to taste. Allow to simmer an additional 10-15 minutes and then stir in creme fraiche and heavy cream.
