After about a minute add your ginger and cinnamon, stir again once each minute for 5 more minutes. Carrots should be slightly tender, but not mushy. Turn heat off, drain carrots Place carrots on plate, garnish with a slice of cilantro. and Voila ! Your master piece side dish is done.
