Bring water to boil on high heat. Stir in quinoa. Return to boil. Turn heat to medium-low. Cover and smmer 15 to 20 minutes or until water absorbed and quinoa is tender but chewy. Remove cover. fluff. Cool to room temperature.Put 2 cups of quinoa in large bowl. Reserve remainder for another salad or side dish. Add pomegranate, cucumber, green pepper, green onions, parsley, cilantro and mint. Toss gently.In large measuring cup whisk together lemon juice, oil, salt and pepper. Pour over quinoa mixture.
