1 cup chopped cucumber
1 garlic clove, minced
1/2 cup goat or feta cheese crumbles
DRESSING:
1 tablespoon extra virgin olive oil
Juice from 1 lime
2-3 fresh mint sprigs, leaves removed and chopped
2 tablespoons chopped fresh cilantro leaves or parsley
Sea salt and fresh ground pepper, to taste

Cook the dry quinoa as you would raw rice: in 2 and 1/2 cups fresh salted water, covered, until all of the water is absorbed. If you have a rice cooker, I suggest using it.Whisk together the oil, lime, herbs and seasoning.Scoop the cooked quinoa into a bowl and add the rest of veggies, drizzle with the dressing and toss lightly with a fork until combined.
