Here is how you make Summer Quinoa Salad:

Bring water to a boil. Add quinoa and reduce heat to low. Cover pot and simmer 15 minutes. Allow quinoa to cool. In a large bowl combine quinoa, tomatoes, cucumber,, green onion, carrots and parsley. Mix together oil, lemon juice and salt and drizzle over salad. Toss to coat salad.
