Large Plum tomato
Half large red bell pepper
3 baby carrots
1 stalk celery
half clove garlic minced
3-4 Tbs fresh chopped parsley
salt, pepper to taste
3-4 Tbs lemon vinegrate --recipe below

Lemon Vinegrate
2 Tbs fresh lemon juice (about 1/2 lemon)
6-8 Tbs good olive oil
pinch of salt and pepper
1tsp sugar
whisk all together

Here is how you make Brown Rice Salad:

Cut all your veggies in very small chunks and add to rice. Add parsley, garlic, salt and pepper, pour vinegrate over and mix well.warning: use only small amount of fresh garlic, a little goes a long way here, I recommend half of a small clove, but let your tastebuds decide. Same goes for the amount of vinegrate used, make it to your liking. I never measure ingredients so these are eyeball figures.
