I recently got a Vegetti slicer. I was looking for healthy recipes to make with other vegetables besides zucchini. I found several recipes for salads made with root veggies. I gave it a Vegetti twist and came up with my own version of it, hence the name, Tangled Root Salad. I found a bottle of Paul Newman's Own Lite Lime Dressing. I used 8 Tbs when I made it.

Wash and peel veggies. Use a Vegetti or similar type of slicer that makes veggies look like spaghetti. Chop fresh cilantro and add to veggies. In a bowl whisk together lime juice, vinegar, olive oil, salt, and pepper. Pour over veggies and mix well. Enjoy. Serving Size:?Makes 8 1/2 C servings
