1 1/2 tsp. yellow mustard
3 Tbsp. cider vinegar
3 Tbsp. sugar
16 oz. pkg. fresh baby spinach
4 strips bacon
2 green onions, thinly sliced
Slivered almonds
Fresh mushrooms, sliced


How Do I Make Spinach Salad?

Here is how you make Spinach Salad:

Cook bacon until crisp. drain, reserving 1-2 Tbsp. grease. (I make this without the bacon and it's okay, but much better with the bacon!) Crumble bacon and set aside. Cut each egg in half. Put egg yolks in small bowl. Using the tines of a fork, mash the egg yolk. Add mustard, vinegar and sugar. Mix well and set aside. Chop egg whites. Set aside.Cut or tear spinach into bowl. Toss with egg yolk dressing. Add bacon grease and toss again. top with egg whites, almonds, onions and bacon. Top with sliced mushrooms. Serve immediately.
