The ingredients for Vegetable Quinoa Soup are:

Heat olive oil in a heavy stockpot. Add chopped onion and cook until tender. Add minced garlic. Cook another 2-3 minutes. Add other chopped vegetables and cook another 4-5 minutes, stirring occasionally. Add the 15 oz. can of tomatoes, bay leaves, thyme and fresh basil. Reduce heat and cover. Cook until veggies are tender; about 20-30 minutes. Stir in cooked quinoa. Salt and pepper to taste.

Other notes: I've used chicken broth (low-sodium) in place of veg. broth. Also I have added the quinoa dry and water to the soup pot; stirring so it doesn't stick.
