1. Preheat a nonstick small/medium skillet over medium heat. Add a spray or two of non-fat cooking spray2. Add the onions to the warmed pan and cook until slightly soft (about 2-3 minutes)3. Add in the egg substitute, reduce heat to low and cover for about 2 minutes (egg should start getting thick).4. When bottom half of egg is firming up, add the spinach and tomato.
