1 lb. spaghetti
3 cups italian roma style tomatoes
1/2 onion, chopped
4 garlic cloves, minced
1 T. olive oil
1/4 cup parmesan cheese
2 T. butter
2 tsp. fresh basil, chopped


How Do I Make Pasta pomadoro?

Here is how you make Pasta pomadoro:

Put water on to boil for spaghetti. Mince garlic and onion, saute in deep frying pan with heated olive oil over low heat about 10 mins. Puree the tomatoes in a food processor until they make a thick sauce ( you may have to do this in stages, depending on the size of your processor). Add to the sauted mixture, add chopped fresh basil, salt and pepper to taste and simmer over medium to low heat for 20 minutes. Cook pasta, subtracting 2 minutes from length of cooking according to package. When pasta is done, add 1 cup of the pasta water to the now reduced tomato sauce and bring to boil. Add under cooked pasta and cook for 2 minutes (the pasta absorbs the sauce). Add parmesan and stir. Finish sauce by adding butter, to add creaminess, stir.
