2 tsp. olive oil
2 Tbsp. onion
3 cloves garlic
1 tsp. crushed red pepper flakes
16 oz. sliced white mushrooms
3 plum tomatoes
1-14.5 oz can diced tomatoes, no salt added
1-15.5 oz can white beans, rinsed & drained
1-12 oz box whole grain pasta (I used Rocconto 8 whole grain macaroni)
2 bunches of broccoli, cut into florets
Seasonings of choice, I used about 1.5 tsp of each:
Garlic powder
Dried basil
Dried thyme
Ground marjoram
Black pepper
Dried rosemary
Dried oregano


How Do I Make Vegetable Pasta?

Here is how you make Vegetable Pasta:

Boil water. Heat olive oil, add onion, garlic, & red pepper flakes. When fragrant, add mushrooms. Cook over medium-high heat until brown. Cook pasta, adding broccoli to pasta water during last 3 minutes of cooking (earlier if you want broccoli cooked softer). Add seasonings of choice to mushroom mixture. Add fresh & canned tomatoes.
