1 T. butter
1 T. olive oil
2 cloves garlic, or 1 tsp prepared minced garilc
1 lg zucchini, halved and sliced
1 lg summer squash, halved and sliced
8 oz baby portabella mushrooms, thinly sliced
1/2 large onion, diced
6 plum tomatoes, seeded and chopped
1 T. dried parsley
1/2 tsp black pepper
1/2 tsp ground thyme
1/2 T. seasoned salt
1/2 T flour
8 oz Barilla Roasted Garlic Sauce
8 T freshly grated parmesan cheese


How Do I Make Veggie Fettucine?

Here is how you make Veggie Fettucine:

Cook pasta in a large pot according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium heat. Add onion, saute about 3 min till soft. Add zucchini and squash. Cook till tender crisp, about 10 minutes, add mushrooms. Cook till all vegetables are soft. Add parsley, thyme, pepper, and seasoned salt. Stir in tomatoes. Cook till tomatoes begin to slightly break down, about 3 minutes. Reduce heat to low. Using slotted spoon, add vegetables to pot containing pasta. Be sure to reserve as much liquid in the skillet as possible. Add flour to liquid. Over low heat, stir in flour making sure there to break up any clusters. Stir till liquid becomes sauce-like. Add the 8oz of jarred sauce to the skillet and stir well. When heated through, add to pasta and veggies; mix well.
