How Do I Make Veggie Lasagna?

Here is how you make Veggie Lasagna:

Peel & dice the eggplant and onion. Saute with garlic & olive oil until soft. Add jar of sauce & water to veggies. Mix ricotta, cottage cheese, egg, parsley (save a bit for garnish on the top) and 1/2 mozzarella in a bowl.Pour 1 cup of sauce onto the bottom of your casserole dish & arrange uncooked lasagna.Layer more sauce, then cheese mixture. Continue layering making sure to leave enough sauce to cover the last noodle layer. Sprinkle remaining mozzarella & parmesean over the top and garnish with chopped parsley.Bake at 350 covered in foil for 45 minutes.
