I have fooled a few omnivores who thought it was made with beef. To make this vegan, omit the eggs- the texture will be a bit more crumbly. In a large bowl, mix the wheat germ, oats and dried herbs.Add the rest of the veggies & give it a good mix.In a small bowl or measuring cup, blend the soy sauce, Dijon mustard and peanut butter (I know, sounds like an odd mix, but trust me).Then add the eggs and stir until well combined.Add the wet ingredients to the large bowl and stir for a couple of minutes or more. The stirring helps create the "meaty" texture. The mix should become more dense & wet.Spoon mix into muffin tin & tamp it down to be level with the top of the cup.Bake for 45 minutes or so. Let cool slightly and pop the mini- loaves out of the pan.
